Beef Short Rib Bolognese
6 beef short ribs
1 tablespoon salt & pepper
2 tablespoons olive oil
3 garlic clove, crushed
1 large onion, diced
2 stalks of celery, diced
2 carrots, diced
2 cups Ferrante’s Vino della Casa Red Wine
2 cups beef stock
2 sprigs of fresh thyme
4 bay leaves
Preheat oven to 325 degrees.
Season beef with salt and pepper.
In a Dutch oven or large pan add olive oil, and heat on high. Add the ribs and sear on all sides.
Lower heat to medium and add onion, garlic, carrot, celery, fresh thyme and bay leaves. Cook for 5 minutes.
Add Ferrante’s Vino della Casa wine and beef stock. Make sure that the meat is completely covered in the liquid. Cover with and transfer to the oven and cook for 3 hours or until meat is tender and can break apart easily with a fork.
Serve over fresh fettuccine pasta or creamy polenta. Top with burrata mozzarella to make it extra special.
