Turkey Trot Recipe

Ferrante’s Cranberry Grain Salad


1 cup of Farro, cooked

1 cup of Brown Rice, cooked

2 cups brussels sprouts, shredded

¾ cup dried cranberries


Cook the farro and brown rice according to package instructions, set aside let cool.  In a large bowl combine farro, brown rice, brussels sprouts and dried cranberries. Set aside.


Poached Apple Ingredients:

½ bottle of Ferrante’s Cranberry Blanc wine

1 bottle of Ferrante’s Apple Pie wine

32 oz. Cran-Apple Juice

2 cinnamon sticks

2 oranges, juiced and placed in pan

10 black peppercorns

2 bay leaves

1 cup brown sugar

1 cup granulated sugar

6 oz. red wine vinegar

10 medium sized apples, peeled and quartered

Poached Apple Directions:

In a large sauce pan add all the above ingredients, except the apples.  Bring mixture to a boil, remove from heat.  Add apples to a large bowl, pour hot mixture over apples to poach.  Set aside. Once cool add to farro and brown rice mixture.

Cranberry Blanc Vinaigrette Ingredients:

4oz. Ferrante’s Cranberry Blanc wine

4oz. frozen cranberry concentrate

2oz. cran-apple juice

2 tablespoons honey

½ teaspoon cinnamon

¼ cup white balsamic

½ cup olive oil



Cranberry Blanc Vinaigrette Directions: In a blender add all ingredients and blend until smooth and creamy.  Add vinaigrette to farro and brown rice mixture.
